Chocolate Ginger Crack-Up CookiesB> ![]() 1 cup granulated sugar 6 tbspn unsalted butter 2 large eggs 1/4 cup plus 2 tbsp unsweetened cocoa powder 1 tspn vanilla extract 1 cup all purpose flour 1 tspn baking powder pinch of salt 1/2 cup chocolate chips 1/3 cup minced candied ginger 1/2 cup confectioner's sugar ![]() 1. With an electric mixer, beat the granulated sugar with the butter. Mix in the eggs, then add the cocoa and the vanilla; beat at medium speed until smooth and creamy. Next add the flour, baking powder and salt. Mix the dough for two minutes. Stir in the chocolate chips and the ginger. Cover and refrigerate at least two hours. 2. Preheat oven to 350 degrees. Line 2 baking sheets with parchment or wax paper. Form the cookies into 1-inch balls and coat generously with confectioner's sugar. Place the balls one inch apart on the prepared cookie sheets. Bake for twelve minutes or until the tops look cracked. Yields about 2 1/2 dozen. |
